It’s Eli Vedral here—baker, owner, and founder of Kookaburra Cookies. All of my cookies are “strumble” cookies. Strumble™ is my riff on the crumbly streusel topping that you often find on muffins, cakes, and breads. I upgraded it and fused it with my favorite dessert: cookies!
The idea for Kookaburra Cookies first came to me as a teenager while studying abroad and working at a restaurant in Sydney, Australia. One of my favorite things to do was try hole-in-the-wall restaurants and unique dessert shops. I was shocked at how popular food fusion (or the combining of foods that do not traditionally go together) was in the land down under. It completely changed the way I thought about food, and about baking.
I named my business after the Kookaburra—an iconic bird native to Australia—because they are known for spreading joy and making people smile. I want to channel that same energy through my cookies.
I develop (and continue to develop) all of Kookaburra’s recipes from scratch myself. My cookies are soft, jam-packed with unique flavors and textures, and balanced with a hint of salt. Even after three years, my top-secret recipes are still constantly being tweaked and improved.
As a recent graduate from Creighton University, I’m a big fan of Omaha. My goal is to open my own dessert shop and continue to spread joy through my cookies.
